Energy Bars

6 oz chopped dates
4 oz sultanas
1 oz chopped walnuts
5 to 6 oz brown sugar
2 eggs, beaten
drop of vanilla essence
18 oz crushed digestive biscuits

1. Simmer the dates, sultanas, walnuts and brown sugar gently for 5 minutes
2. Add the eggs and cook for another minute
3. Add the vanilla essence
4. Stir in the crushed biscuits and mix well
5. Spread in a tin and leave until cold
6. Cut into fingers and wrap in foil or cling-film, and keep in a sealed container
